Celiac Disease Diet

Dietary modification and eating a gluten free diet is still the first and most effective treatment for Celiac disease. Celiac disease is an autoimmune and digestive disorder in which gluten-containing food causes inflammation in small intestine of people along with host of other symptoms.

What is gluten? Gluten is a protein found in grains like wheat, barley, oats, rye, etc.

So, essentially, eating a gluten free diet is the main treatment for people with celiac disease. However, it is easier said than done and many people find it difficult to switch over. Also, people are not aware of many hidden sources of gluten.

Let us try and memorize the food that contains gluten and the gluten-free ones.

Some common Gluten-containing food:

wheat barley rye triticale triticum malt beverages
bread flour malt vinegar durum flour kamut farina graham flour
spelt beer semolina cakes pies croutons
pastas oats matzo couscous communion wafers soups & sauces

Gluten-free food:

rice soy corn tapioca cassava beans arrowroot teff quinoa
flax yucca millet potato buckwheat groats amaranth buckwheat fresh meat fish
eggs fruits nut flours poultry sorghum Most dairy products

One of the common mistake people do is they don’t watch for cross contamination of gluten-free food with gluten-rich food. For example, while fresh poultry is allowed, breaded or marinated chicken is not, for it is now contaminated with bread. So, always keep a watch on contamination and do read the labels before you eat anything. Stay gluten-free, stay healed!
